I was considering picking up some Eibachs. But, they'd lower my car ~0.8 inches in the back from what I hear. Now, I currently rub at times with a fully loaded car in the rear during dips and bumps. Will I rub more with the Eibachs because they're lower? Or will the stiffer spring rate make up for it?

Chances are you are going to rub at least the same amount.
The best bet is to get under there and see where it is rubbing. Hopefully, it is on the outside. If this is the case, you can roll the fender lip to clear up the problem. Where the lip folds in, it is parallel with the ground. You can push this up to a better angle to allow for more clearance.

You're likely rubbing by the fender area. Lowering the car should not significantly increase the rubbing; it has more to do with the offset and tire width
