What other sizes will work with the stock 19" rims without causing problems?

255/40-19's?

Do they make a 255/35-19?

That would keep the outside diameter about the same as stock.

I chunked my stock 19s at the last track day pretty bad. I'm going to replace with Kumho MXs in a 245/35-19 size. I've run the MXs as street tires and they wear very well. They are also very grippy, and are almost competitive with competition tires.

And, they cost less than $200 per corner, instead of $300 like most others. And, yes, their quality is just as good or better.

I've heard a lot of people use these (my bro being one) and they always complain about the noise they produce. They say they are great when new but quickly become noisy. My brothers sounded like super swampers!

Ok that's cool but I have another question -

How do you know what size width-wise will still fit on a certain rim?
I'm sure you couldn't just go from a 245 to either a 205 or 315 or something like that so is there a set formula to determine the min/max width of a tire on a rim?

Manufacturers recommendations are always a good start! I wouldn't go but one size above or below IMO.
